A little word about Thai cuisine...

Thai and Isan cuisine is a true delight for the taste buds, combining exotic flavors, complex spices and freshness of ingredients, offering a diversity of delicious and fragrant dishes that delight the taste buds and the senses.

This cuisine is renowned for its balance of sweet, salty, sour and spicy, creating an explosion of tastes in the mouth. Thai and Isan dishes feature a wide variety of ingredients such as coconut milk, lime, Thai basil and chili pepper. Prepared with care and love, these colorful and fragrant dishes reflect the cultural and culinary richness of Thailand, and promise an unforgettable gastronomic experience.

The main principles of Thai cuisine...

Here are some of the main principles that define Thai cuisine:

1. Balance of flavors: thai cuisine emphasizes the balance of flavors, combining sugar, salt, acidity and heat to create harmonious dishes.

2. Use of aromatic herbs: fresh herbs and spices are widely used in Thai cuisine to flavor dishes, provide unique aromas and make dishes more flavorful.

3. Key Elements: some key ingredients in Thai cuisine include coconut milk, curry, lime, lemongrass, Thai basil, coriander, galangal, chili pepper and fish sauce.

4. Aesthetic Presentation: food presentation is an important aspect of Thai cuisine, with particular attention paid to the aesthetics, color and texture of foods to create visually appealing dishes.

5. Importance of Rice: rice is a staple food in Thailand and accompanies most meals. It can be cooked in different ways, whether it is glutinous rice, fragrant jasmine rice or rice noodles.

6. Cooking Techniques: Thai cuisine also uses different cooking techniques such as frying, grilling, stir-frying, braising and steaming to prepare a variety of flavorful dishes.

But who is Num ?

Chef Weerawat “Num” Triyasenawat is known for his mastery of authentic Thai cooking flavors and techniques. He is passionate about using local and fresh ingredients to create tasty and colorful dishes.

Num believes that cuisine itself is rich living history and Chef Num is fascinated by the challenge of bringing the past to meet the present to shape the next chapter of Thai cuisine.
Chef Num follows a philosophy of discovering forgotten foods and plants and bringing that passion and curiosity back to his guests’ tables. 80% of the produce used is locally grown (farm & edible forest), and the remaining food comes from many sources such as foraging at special educational events held in different parts of Thailand.

His restaurant Samuay and Sons is located in Udon Thani, Thailand and is renowned for offering delicious traditional Thai cuisine.

The program of the day...

  • Your discovery day will begin at 11 a.m., with a welcome toast and a visit to the farm with Aun…
    At midday, a light lunch, noodle soup for example…
    At 1 p.m., cooking class, 4 courses.
    Around 6-7 p.m., dinner and tasting of dishes prepared together.
